Sweet Thai Chilli Halibut
Halibut cut into 1” cubes
Tempura Batter
Olive oil to cover bottom of skillet
Sauté battered fish in olive oil until golden brown
Remove fish from skillet
Add Sweet Thai Chilli Sauce to skillet, stir in fish sauce (this sauce should make just enough to coat fish)
Add back the halibut cubes and heat through
Serve with rice
Black Bean Halibut
Heat jarred black bean sauce (follow portion amount on jar) in a couple of Tbs of olive oil, stir in pinch of sugar
Add to pan Halibut cut into 1” cubes and sauté along with long sliced green onion until fish is tender and flakes (approx. 2-3 minutes)
Serve with/over rice
Note: this recipe can also be used with shucked fresh Dungeness crab and served over pasta or rice
Good Old Pan Fried fish (salmon, halibut or cod)
Filet fish and cut into serving size portions
Dip fish in milk then dredge fish in a mixture of flour, salt, pepper, dried mustard
Melt butter in heavy skillet
Cook fish turning once until tender and flakes
Blackened Fish (salmon, cod, snapper)
Filet fish into serving size portions
Mix together:
2 tbsp. salt
2 tbsp. paprika
1 tbsp. garlic powder
2 tsp. red cayenne pepper
2 tbsp. ground black pepper
2 tsp. ground thyme
2 tsp. Oregano
Rub into fish and sauté in heavy skillet in melted butter
Turn once and cook until tender and flakes
Serve with rice
Garlic Dungeness Crab
Shuck 2 crab, set aside
Melt butter in sauce pan and add fresh minced garlic
Stir in milk or cream (enough to make a sauce approx. 1-2cups)
Add ½ cup parmesan cheese and stir to mix
To above mixture add the crab and heat through
Serve over pasta
